Allium to open on 1 February – Passionate About Food & Drink

Everything is on track and looking good at 'Allium', which is to be located in Lynedale House, High Street, Tattenhall and which opens its doors on 1 February.

This member of the Webteam popped in during the substantial alterations that were well underway this morning, to have an informal chat with the very experienced Mark Ellis; 'Allium' being his new venture.

Mark is the former Great British Menu Chef and has most recently left his role as head chef of the three-AA-rosette Peckforton Castle. Without reservation, Mark is openly excited and embracing the several layers and phases of his new development, his mantra being his passion for food and drink.

The generic name 'Allium' is the Latin word for that group of bulbs which contain many 'layers' such as shallots, onions, garlic, leeks, scallions; Linnaeus first describing 'Allium' in 1753. How ironic is that you say because Dr Mark Spencer was in the village only last week giving his keynote lecture on the 'Plant Hunters' and pronouning Linnaeus to be his hero – it must be a sign!

The 'layers' or 'phases' of Mark's new undertaking are many and varied.

Phase I, opening on 1 February, will relate to the Bar, the Restaurant and the newly refurbished Kitchen Areas. Mark intends to bring his 'eclectic style and imagination' to Tattenhall – there will be no compromise on the key areas of quality, service, affordability, accessibility and relaxation.

Phase II, scheduled to open in the early spring, will feature 5 spacious, boutique, luxurious bedrooms with fabulous ensuite facilities.

With a bespoke, traditional, period Orangery planned to make use of the impressive outdoor space at the rear of the building, there is the further opportunity to complement this already wonderful building. This valuable modern space will allow the substantial development of Afternoon Teas (with a modern twist), morning coffees and provide a further private dining space.
