Well ... we knew he was excellent, evidenced by his fantastic restaurant here on our High Street in Tattenhall.

Not satisfied with just one restaurant, the acclaimed chef Mark Ellis, who represented the North West in two series of BBC's Great British Menu, is to open another new restaurant in North Wales at the 5 Star award winning 'The Plassey', near Bangor-On Dee, Wrexham.

The restaurant & wine bar will be named 'SHIPPON by Mark Ellis' and the building is currently being extensively refurbished into a unique destination restaurant & bar within a modern and refined space and to include a central feature wine bar, lounge and even its own wine tasting room, whilst staying sympathetic to, and retaining the integrity of, this remarkable Edwardian building's original design.

The building, originally a model Milking Parlour built, was in 1902 by local Horse Auctioneer, Mr Frank Lloyd, and it enjoys many beautiful and unique features, including glazed walls and drinking troughs, brick arches and parquet floors.

The Brookshaw family took ownership of The Plassey in 1960 as a working farm and over last 5 decades have transformed The Plassey into a top North Wales Holiday Park, Retail Village and Golf Course.

This will be Mark's second restaurant opening in 12 months and he had this to say:

'It is a privilege to be teaming up with the owners of The Plassey to complement the product at the already outstanding 5 Star Leisure Park and to provide another truly unique space and 'wow factor' area for all local guests and those from further afield. This an exciting project in which to be involved and follows the tremendous success of our first restaurant 'Allium – Tattenhall' which has had an incredible first year and has already caught the attention of The Michelin Guide, Harden's Guide and was runner-up for Best Small Hotel and Boutique Accommodation from Marketing Cheshire. Most recently, 'Allium' was rated 8/10 from The Telegraph and we will continue this success at 'Shippon'.

John and Sarah Brookshaw, owners of The Plassey, added their comments:

'We are delighted to be working with Mark Ellis on our new business venture. We always strive to offer our customers the highest of standards and a truly unique experience, whether it is visiting for a few hours, a day out or a stay at our Holiday Park. Mark's fantastic culinary background was exactly what we were looking for in a partnership to provide a top fine dining experience in our area. We can't wait to open the doors and welcome you all very soon'.

The official opening date of 'SHIPPON by Mark Ellis' is to be announced shortly.
